Lemon Burst Cookies

I made around 100 Lemon Burst Cookies for the Greenwood, MO Spring Open House last weekend.  They were a HUGE hit and several people asked for the recipe.  I take absolutely NO credit for this creation, but felt compelled to share Tidy Mom’s great recipe and bake 200 more for this weekend!

They’re so easy, Brian was able to give the recipe to a few customers without even asking me!

If you read the reviews, you’ll see that a few people had trouble with them turning out “flat”. I didn’t have that problem at all! I did use a quality cake mix, Betty Crocker with pudding in the mix. I kept them very small and COATED them in powdered sugar before placing on the tray. Roll ‘em around in a bowl full of it. Don’t be shy! I always use parchment for baking, makes a huge difference! I cooked them at 350 for exactly 11 minutes in my 1974 wall oven. You may need to adjust that for your oven. When in doubt, undercook them. Kinda like brownies.
